Description
Bienvenue à la Maison de l'Etivaz! L'Etivaz AOP est un fromage d'alpage à pâte dure qui est fabriqué entre le 10 mai et le 10 octobre à partir du lait cru fourni par plus de 2800 vaches paissant sur quelques 130 alpages situés entre 1'000 et 2'000 mètres d'altitude, chauffé exclusivement au feu de bois dans des chaudières en cuivre. Fromage d'alpage par excellence, L'Etivaz AOP répond à un cahier des charges précis et exigeant. Le lait cru provient des vaches qui se nourrissent d'un richissime herbage naturel dont la qualité floristique influence l'arôme et le goût typique du L'Etivaz AOP. Plus de 60 producteurs apportent leurs fromages produits dans les alpages pour la maturation et l'affinage de leur prodution aux caves de l'Etivaz.
