The concept of the pop-up restaurant is no longer really new. People have long since become accustomed to the fact that mostly in the summer season, but sometimes in winter too, culinary attractions literally pop up overnight. Not only in New York and London, but also in Bern, Lucerne or Zurich. There were already a few before the pandemic began, and even more opened in response to the crisis. Some were born out of necessity, others were long planned with or without guest chefs. By the way, the really successful pop-ups often establish themselves, are repeated the following year or become a permanent institution right away. Alternatively, the operators may simply swap them for a new, perhaps more exciting concept.
